Creamy Cilantro Lime Dressing

This dressing packs a ton of flavor for a fraction of the calories in traditional dressing! (26 kcals per 1/4 cup vs ~400 kcals!)  No one will ever know that this recipe gets its creaminess from tofu. Use half of a box for this dressing and the other half in a Strawberry Smoothie.

Ingredients
1/4 cup fresh cilantro
1/2 tsp ginger, cleaned & chopped
1 garlic clove, chopped
2 green onions, chopped
2 limes, use zest and juice
2 tsp white wine vinegar
1 Delget noor date (or 1/2 Medjool date)
1 Tbsp Dijon mustard
6 oz silken tofu (1/2 “box”)

Procedure
Combine all ingredients in blender, zesting lime before squeezing it for the juice. Blend until smooth. Makes ~1.5 cups.
