Recipe: Garlic and Herb Vinaigrette Dressing


Garlic and Herb Vinaigrette Dressing

This dressing can be made with fresh garlic for a stronger flavor, or with roasted garlic for a sweeter, more mellow garlic flavor. This version utilizes dried herbs, but fresh can be used if you have access to them!

1 garlic clove, minced OR 3 to 6 cloves of roasted garlic (mashed well)
4 Tbsp vegetable broth (or water)
3 Tbsp red wine vinegar
1 Tbsp lemon juice
pinch of celery seeds
1/4 tsp dry mustard powder
1 tsp dried dill weed
1 tsp dried basil
1 tsp dried marjoram
1 tsp dried chives
1/8 tsp pepper
1/4 tsp salt (taste before adding if using veggie broth)

Combine all ingredients in a jar with a tight fitting lid. Shake until well blended and keep in fridge until ready to use (note: the raw garlic may get stronger each day).
