Lime Cilantro Rice
This recipe comes together in minutes and is fantastic next to spicy black beans or in a burrito!
1/3 cup scallions (green onions), finely chopped
2 Tbsp lime juice, use 1 tsp of lime zest
1 jalapeno pepper, finely diced (~2 Tbsp)
a few Tablespoons of vegetable broth or tomato juice (in place of oil)
3 Tablespoons fresh cilantro, finely chopped
3 cups cooked brown rice (from 1 cup uncooked brown rice – see cooking techniques)
Saute jalapeno, scallions and garlic in broth for 2-3 minutes. Stir in remaining ingredients, being sure to zest the lime before squeezing and warm the rice, if cooked earlier, before combining with other ingredients.
