    Hi Timaree, I made it today with the darker orange sweet potatoes I had at home and still delicious. Love all the toppings. Great foodie bar from your book!

    What makes sweet potatoes healthier that white potatoes regarding blood sugar?

      Thank you for your question! I replied to your email, but wanted to share the answer here, as well. Sweet potatoes provide an impressive amount of fiber, which can help moderate the rate at which the carbohydrate is broken down and absorbed into the blood stream, but there is also some research that suggests phytonutrients in sweet potatoes can raise blood levels of a compound called adiponectin (impacts insulin sensitivity and typically low in people with poor glycemic control). Enjoy all varieties of sweet potatoes, and search out those purple varieties at the Farmers’Market!
