Recipe: Pizza-dillas!

What happened when a quesadilla crashed into a pizza? This delicious recipe was born! I spent a morning in my son’s 2nd grade class and the students helped me create these pizza-dillas made with whole grain tortillas filled with all kinds of veggies. As the kids started eating, I heard, “I can’t believe this!” “It is so good!” “Wow, the pineapple gives it just a little sweetness!” “Can we have another slice?” “I didn’t think that I’d like all of those vegetables together!”

Pizza-dillas

Ingredients
Whole grain tortillas
Tomato sauce (your favorite)
Carrot, grated
Baby spinach
Zucchini, finely diced
Broccoli, finely diced
Pineapple, finely diced
Olives, finely diced
Garlicky white bean spread or hummus

Procedure
When the toppings are cut up small enough, each bite will provide the perfect combination of flavors! Spread a few tablespoons of tomato sauce on half of a whole grain tortilla, and bean spread on the other (if using), then layer with all of the toppings. (Even if you are skeptical, use all of the veggies/fruit listed, you just might be pleasantly surprised!) Fold tortilla in half and cook in a dry  plan or griddle until golden brown on each side. Slice into pizza-shaped wedges and enjoy as soon as they are cool enough to eat!
