The Nutrition Professor’s “Cook Smart” Caramelized Onions

Caramelizing onions in the oven is a cinch, so make a big batch (they can even be frozen)!

Ingredients
4-5 onions (cut with the slicer blade of food processor if you have one)
1 T balsamic vinegar
1/2 tsp salt
1/2 tsp pepper

Procedure
Toss onions with vinegar, salt and pepper. Arrange onions on 2 baking sheets lined with foil and rubbed with a small amount of canola oil on a paper towel. Roast onions at 350F until golden brown and sweet, about 30 minutes, stirring every 7-10 minutes to ensure even cooking. Enjoy on sandwiches, salads, grain and bean dishes, pizza, wraps and more!
