Sweet potatoes provide an impressive amount of fiber, which can help moderate the rate at which the carbohydrate is broken down and absorbed into the blood stream, but there is also some research that suggests phytonutrients in sweet potatoes can raise blood levels of a compound called adiponectin (impacts insulin sensitivity and typically low in people with poor glycemic control).
