Garlic and Herb Vinaigrette Dressing

This dressing can be made with fresh garlic for a stronger flavor, or with roasted garlic for a sweeter, more mellow garlic flavor. This version utilizes dried herbs, but fresh can be used if you have access to them!

Ingredients
1 garlic* clove, minced OR 3 to 6 cloves of roasted garlic (mashed well)
4 Tbsp vegetable broth (or water)
3 Tbsp red wine vinegar
1 Tbsp lemon juice
pinch of celery seeds
1/4 tsp dry mustard powder
1 tsp dried dill weed*
1 tsp dried basil*
1 tsp dried marjoram*
1 tsp dried chives*
1/8 tsp pepper

Procedure
Combine all ingredients in a jar with a tight fitting lid. Shake until well blended and keep in fridge until ready to use.

The Nutrition Professor’s Shop Smart and Prep Smart Tips:

*To maximize the health-promoting properties of the garlic, crush/press/mince the garlic and let it sit for at least 10 minutes before adding it to the rest of the ingredients (esp. acidic ingredients like the vinegar and lemon juice).

*Raw garlic will likely get stronger each day if you plan to make more than you can use at one time, so consider using both fresh and roasted garlic.

*All of those herbs can be used fresh, simply double the amount and ensure they are chopped finely (or use a blender).

*1 TBSP of “Italian Seasoning” like the one in my cookbook, The Foodie Bar Way and here on this website can be used in place of all of the dried herbs in this recipe.
